Quinoa salad in a jar

Do you work late at night and don’t have time to prepare complicated dishes for the family dinner? Thanks to our recipe, you can take a fresh and ultra-healthy dish out of the fridge, and save precious minutes!
This salad is very simple to prepare, keeps for several days and it ticks all the nutritional boxes.
Did you know ? Quinoa is very rich in nutrients that the body needs: protein, fiber, manganese, magnesium, phosphorus, folate, iron, zinc, potassium, copper, B vitamins, as well as small amounts of calcium and vitamin E. Just that!
Ideal, therefore, to recharge your body with all the useful micronutrients and to get in shape quickly!
Plus, quinoa does NOT contain gluten – good news for those intolerant to this ingredient.

Easy

Put the quinoa in a saucepan with 600 ml of water and the vegetable stock powder. Cover and bring to a boil. Cook 12 to 15 minutes until all the liquid is absorbed. Let cool.

Peel and grate the carrots. Cut the cucumber lengthwise and scoop out the seeds with a teaspoon, then dice the cucumber.

For the vinaigrette, combine all the ingredients in a bowl.

Divide the vinaigrette between 500 ml jars. Add cubes of cucumber, quinoa and grated carrot. Finish with some pomegranate seeds, pistachios and chopped mint leaves.

Reserve the salads in the refrigerator. They even keep for several days!
When ready to eat, pour the salad into a deep plate and stir to evenly distribute the vinaigrette.
