ARE YOU THROWING A COCKTAIL PARTY?
Before you select your products, you must answer a number of key questions:
Sweet or salty?
Depending on the time and style of your reception, you must decide whether you want only salted or only sweet fare, or a mix of both . What reheating equipment will I have on the premises of my reception? If you do not have a traditional oven on the premises, opt for cold pieces (pains surprises (hollowed-out loaves filled with sandwiches), canapés, mini sandwiches, verrines). Please note: a microwave oven is usually not suitable for reheating hors d'oeuvre for cocktail parties such as puff pastry or tarts.
How many guests have I invited?
How long will my reception last?
You will be able to determine the theoretical/average number of pieces you will need (see below), depending on how long the reception will last and how many people you have invited. You must then make adjustments according to the appetite of your guests, the time or style of your reception (drinks only or drinks and dinner?)...
If necessary, you must increase the quantities
Quantities for drinks and dinner:
* For a one-hour cocktail party, count between 10 and 12 pieces per person
* For a two-hour cocktail party, count between 12.5 and 15 pieces per person
* For a three-hour cocktail party, count between 15 and 18 pieces per person
For drinks only, count on 6 pieces per perso
Presentation of your products
Verify on the sheets of the products selected how they are packaged: simple transport box, small presentation platter... etc. - each product is packaged differently. For a simple presentation, all you will usually have to do is unpack and layout the products on your buffet.
For a more sophisticated presentation, consider using decorated disposable tableware, or conventional tableware of your choice (plates, small spoons or forks, etc.).
ARE YOU PLANNING A BUFFET?
Here are the rules for calculating the quantities to order depending on the number of guests:

Cooked meats: Count about 100 g per person
Mixed salads: Count between 100 and 150 g per person
Cold meats: Count about 150 g per person
Cheese: Count about 50 and 75 g per person
Dessert: Count about 100 g per person
Mignardises: Count about 6 pieces per person
For children: Count half a portion for children under 13.
GOOD TO KNOW!
More quantities are often consumed at a buffet than during a meal at the table: the guests are actually tempted to try every plate that is served, and are more prone to get an extra helping. That is why you must count on 500 to 700 g per person.
Bread:
Count 50 to 80 g of bread per person (1 roll or 1 baguette for 3). If you plan to serve a lot of cheese or cooked meats, increase the quantities of bread slightly.
Beverages:
1/3 bottle of wine + 1/ 3 bottle of water + 1/4 bottle of fruit juice per person.
A bottle of champagne can fill 6 cups.
